This is an impactful starter which is easily made ahead of time. The background flavours of the gin, grapefruit, lemon and cut grass, provide a lovely counter-balance to the oily goodness of the wild sea trout.
Luke owns and runs Restaurant Jöro in our hometown of Sheffield. Michelin has recognised it for its bold and innovative Nordic style flavours, but Luke is also heavily influenced by his time travelling around Asia, sampling street food.
Jöro tries to stay local, creating their own ferments in-house and stocking shellfish from Scotland, beef from Sheffield, and trout from Hampshire. It truly has brought something new and unique to Sheffield.
Luke is a long-time friend of the ProWare team and, if you look closely, you will notice the ProWare Stainless Steel Tri-Ply pans in the open kitchen, being used on a specially commissioned induction hob.
